Ingredients
- 4 pounds of Granny Smith Apples, about 8 cups chopped
- 2 teaspoons lemon zest
- 2 tablespoons of lemon juice
- 1 cup white sugar, plus1 teaspoon, divided
- ½ teaspoon of salt
- 1 tablespoon all-purpose flour
- 1 teaspoon of ground cinnamon
- ¼ teaspoon of ground nutmeg
- 2 deep-dish, premade pie crusts
- 1 egg
- 1 tablespoon of water or milk
- Vanilla ice cream for serving
Caramel sauce (makes 2 cups)
- 1 cup brown sugar, packed
- 6 tablespoons unsalted butter, diced
- 1 cup honey
- ½ teaspoon salt
- ½ teaspoon ground cinnamon, or to taste
- ½ cup heavy whipping cream
Directions
- Preheat the oven to 375ºF (190ºC).
- Add the lemon zest and juice to a large mixing bowl.
- Whisk in 1 cup of the sugar and stir to combine.
- Add the flour, salt, cinnamon, and nutmeg. Mix thoroughly.
- Wash, peel, core, and slice the apples. Add to the bowl and toss until well coated.
- Pour the prepared apples into one of the deep-dish pie crusts.
- Remove the second crust from its dish and place it over the apple mixture.
- Fold it under the bottom crust and crimp the pie edges with your fingers.
- In a small bowl, whisk together the water and egg to make the egg wash.
- Brush the egg wash on the top of the pie crust.
- Sprinkle 1 teaspoon of sugar and make decorative 4 to 5 slits to let the steam escape when baking.
- Place in the oven and bake for 60 to 75 minutes or until the apples are soft and the crust is golden brown. Use a toothpick to make sure the apples are tender. Remove from heat and let rest on a wired rack to cool for 10-15 minutes before serving.
- While the pie is baking, prepare the caramel sauce. Add all the caramel sauce ingredients, EXCEPT heavy cream, to a saucepan and warm over medium-low heat, stirring continuously until the sugar has dissolved completely and the mixture thickens slightly.
- Stir in the heavy cream and cook for about 1 more minute until the cream is well combined with the caramel.
- Remove from heat and let the sauce cool. As it cools, it will become thicker.
- Serve warm or cold with vanilla ice cream, if desired.

Ingredients:
- ¼ cup butter, melted
- 1 ½ cup chocolate chips, divided
- ¾ cup sugar
- 2 eggs
- ¼ tsp baking powder
- ¼ tsp salt
- ½ tsp vanilla extract
- 2/3 cup all-purpose flour
- Topping
- Vanilla ice cream
- Chocolate sauce
- Whipped cream (optional)
Directions
1. preheat the oven to 350°F.
2. If you have a bowl that is microwave safe, add the butter and then microwave for one half to two minutes until the butter is fully melted and warm.
➥ Remove the bowl from the microwave, then add one cup of chocolate chips. The bowl should rest for about 3-5 minutes until the chocolate chips have been melted. And then stir until it is all combined.
➥ Mix the ingredients into the mixing bowl.
3. Add eggs and sugar to your butter and chocolate. Mix well. Add baking powder, vanilla extract, salt, and all-purpose baking flour.

- 2/3 cup (4 oz)- Ghirardelli 60% Cacao Bittersweet Chocolate Baking Chips
- 1 tablespoon- Coffee liqueur (such as Kahlua)
- 1 teaspoon- Instant espresso granules
Topping
- 3/4 cup- Heavy cream
- 1 tablespoon- Light corn syrup
- 1 cup (6 oz)- Ghirardelli Semi-Sweet Chocolate Baking Chips, Seasonal fruit for garnish, such as sugared cranberries, pomegranate seeds, and mint sprigs
Directions
1. Make for the Crust: Preheat the oven to 350°F. Mix the cookies crumbs, butter, and sugar in a large bowl until thoroughly blended.
➥ Then, press the mixture into both sides of the 9-inch springform pan, covered with cooking spray—Bake in the preheated oven for 10 minutes.
➥ The crust will cool completely on a rack on the wire for around 30 minutes. Reduce the temperature of the oven to 325degF.
2. Make The Cheesecake: Beat cream cheese using a heavy-duty stand mixer and equipped with a paddle attachment at medium speed until creamy and smooth for around 2 minutes. Gradually add flour and sugar and beat until the mixture is smooth.

➥ Beat in vanilla—divide batter into two equal portions, each in two medium-sized bowls. Place one piece of batter into the prepared crust and spread evenly.
3. Set the Ghirardelli 60 percent Cacao Bittersweet Chocolate Baking Cookies inside a compact microwaveable bowl. Microwave at medium (50 percent power) until smooth and melted between 1 and 2 mins and stirring after 30 seconds.
4. Mix coffee liqueur and espresso granules in a small dish until espresso disintegrates; then stir the mixture into the remaining bowl of cheesecake batter.

➥ Pour plain cheesecake batter into the crust and spread it all over. (Pan will be filled to the brim.) Place the springform pan onto a baking sheet with a rim.

6. Cover the pan with aluminum foil and chill for 8 to 12 hours. Use a soft spatula or knife around the outside edge of the cheesecake to release it from the sides of the pan. Take sides off the pan.
7. Make the Ganache Glaze topping: Around 1 hour before serving, heat the corn syrup and cream to a boil in a small saucepan on medium.
